I’m a planner. I plan a LOT. I spend roughly like 75% of my time planning. Seriously. Only for my plans to work out about 50% of the time. (Ok maybe 40%). Enter exhibit A- Dinner tonight.

Tonight is Monday- Tonight we are supposed to have fresh garden salad- picked exquisitely from my beautiful organic garden. (Which is code for my patch of weeds out back that grows veggies sporadically when I remember to pick them). Anyway, that was the dinner “plan”. Dinner reality? 5:00 rolls around just in time for everyone to inform me that they absolutely HATE my beautifully crafted and thought out “Salad Monday’s” and they want something different. Go figure. If it was just the minions- I’d consider a very nice “You get what you get” speech and that would be that. However the mister says the salad has been giving him horrid heartburn and can we please have something different? Ok. Fine. Whatever.
I have absolutely zero other plans because (as mentioned previously) I’m a planner. I only purchased what I “planned” to make this week. So cue the 5:00 crazy dinner dash, as I run around opening cabinets trying to figure out which meal makes me the least likely to feel like the world’s worst slacker Mom, and the least likely to have the sneaking suspicion that child services be called at any minute due to my complete lack of nutritional skills. (Is that a thing? Like the crunchy Mom groups really make me feel like it is….)
When in doubt though… pull and oldie but goodie out. Hobo Dinners. It’s great! All the goodness shoved in a foil packet to make cleanup a BREEZE and since it has meat and veggies included- I mean it might as well be one of the top most nutritious meals for families! I added a side of delicious Mac and cheese AND a side of garden fresh Okra (which totally balances out the Mac n cheese, right?) for a delicious meal in 45 minutes flat! Beat that!
If you are curious here is the recipe-
1 hamburger patty per foil packet
1 Small potato (thinly sliced per packet) Use red or golden yellow potatoes to really make it feel imperfectly perfect!
1 large onion split between the packets
Your choice of seasoning.
Roll out hamburger meat into patties, add remaining ingredients and season (I used Kenny Chesney Cajun seasoning!) Wrap up in the foil and cook for 45 minutes at 350 degrees.
There you have it- an imperfectly perfect dinner for any night of the week.
BTW…I’m choosing to ignore my oldest minion as we sit down to eat and he asks…. “Is this organic?” Who the crap has he been talking to anyway? Of course it’s organic…. of course it is. An “imperfectly perfect” organic meal.
